Krogh’s Restaurant & Brew Pub is celebrating St. Patrick’s Day with our own Sullivan’s Irish Stout! We also took this March Seasonal beer and turned it into a cask-conditioned ale, our very first one here at Krogh’s! The tapping of the cask Stout will be on Monday, March 19 at 7 pm. The batches of this beer are small, about 80 pints, so it’ll only be available until quantity runs out. We handcraft the cask-conditioned ale by taking one of our beers, in this case, the Stout, and transferring it to a small keg, called a “Firken”. The beer ferments naturally without much CO2. It also ferments for a longer time and at a warmer temperature. This is “old-style” brewing and it is served “old-style” through a beer engine. A beer engine hand pumps beer into a glass rather than pushing it through with CO2. Cask-conditioned ales are, therefore, not as carbonated, but they tend to have richer characteristics because of the longer fermentation time, and they are also served warmer.
